Sparkling wine

Pacific Echo Brut nonvintage (Mendocino County). Light gold, with small, lively bubbles, this sparkling wine offers creme brulee, vanilla, and grapefruit aromas on the nose. It follows with round creaminess and yeasty flavors, almost reminiscent of pie dough. Simple, tart, and lively, this is a delightful everyday wine; it would also be perfect for brunch with our smoked salmon- and caper-topped tart.

Pinot Noir

Husch Pinot Noir 2001 (Anderson Valley, CA). A beautiful garnet color, this Anderson Valley Pinot Noir opens with dark cherry, cedar, tea, vanilla, and mocha aromas. Brambly root beer and cola accents follow, balanced with a lighter blue-berry character and an intriguing dill accent. This appealing red would be perfect for almost any meal, since Pinot is a "bridge" wine: It goes well with foods traditionally matched with only red or only white.
