Recipe inspiration
Sunset, Oct, 2006 by J'Nene Wade
I took the August 2006 edition of Sunset along to San Diego for a visit with my daughter and grandchildren. While there, we whipped up a variation on a theme of grilled shrimp with lemon-pesto rice (August, page 104). Not having shrimp on hand, we substituted grilled marinated tuna steaks. Our pesto was a bit unconventional, as we used several varieties of basil from the garden. Because we found ourselves out of garlic, we substituted the oil in the pesto for garlic aioli. Layering rice, tuna, pesto, and tomatoes was a gourmet visual delight. The dinner was a rousing success! Thank you so much for an inspiring springboard from which to build a delicious dinner.
