Field day: crisp winter weather adds spice to a gourmet picnic

HOT SPICED CIDER. In a 3- to 4-quart pan, combine 2 quarts apple juice, 1 cinnamon stick, 6 whole cloves, 1 star anise, and 1/8 teaspoon ground nutmeg: bring to a simmer over medium-high heat, stirring occasionally. Remove from heat and let stand about 1 hour or cover and chill up to 1 day. Just before serving or packing, pour through a tine strainer into another pan and reheat over medium-low heat until steaming. Makes 8 cups.
