Crab Singapore via Seattle … mighty mustard seed, clever cleaver, and more - includes recipes, brief articles on cleavers and wine with crab

Sunset, Jan, 1994 by Jerry Anne Di Vecchio

Riesling goes by several names, including White or Johannisberg Riesling. All are made from the same grape, and the wines are most refreshing in their youth. Right now you'll find 1991 and 1992 vintages in their prime.

The following fruit-foremost wines are reliably outstanding with Dungeness crab. Each costs less than $10.

From California: Firestone Vineyard Santa Ynez Valley Johannisberg Riesling, Greenwood Ridge Vineyards Anderson Valley White Riesling, Navarro Vineyards Anderson Valley White Riesling, and Smith-Madrone Napa Valley Riesling.

From Oregon: Adelsheim Oregon Dry Riesling and Elk Cove Dry Riesling.

From Washington: Kiona Yakima Valley White Riesling and The Hogue Cellars Johannisberg Riesling.

If you like Riesling with crab, then try it with clams or shrimp. However, shellfish as sweet as lobster grows cloyingly so with it.
