MONTE CRISTO SANDWICHES

Monte Cristo Sandwiches are great for breakfast, lunch or dinner. This sandwich tastes like it's restaurant-made, but it is simple to make for your family.

A SANDWICH FOR ALL OCCASIONS

6 slices bread
2 slices cooked ham (1 ounce each)
2 slices cooked chicken or turkey (about 1 ounce each)
2 slices Swiss or brick cheese
2 eggs
1/3 cup milk
1/8 teaspoon salt
Dash cayenne pepper
2 tablespoons butter or margarine, melted

Layer each of two slices of bread with 1 slice ham and chicken. Top each with second slice bread, 1 slice cheese and remaining bread. Secure each sandwich with 4 wooden picks, trim crust and cut into halves or quarters.

Beat egg, milk, salt and cayenne with fork until blended. Dip sandwiches in egg-milk mixture, turning to coat evenly. Brown sandwiches in melted butter in large skillet over medium heat, turning as necessary until golden brown on all sides.

Yields 2 servings
