Easy Hearty Meal
Now that cooler weather has arrived, it's time to prepare a dish that will stick to your ribs. This Easy Beef Stew will help you cope with the lower temperatures.
Easy Beef Stew
Vegetable cooking spray 1 1/2 pounds beef cubes 1 11 1/2-ounce can tomato juice 1/2 cup water 2 large cloves garlic, minced 1 bay leaf Salt and pepper to taste 2 medium potatoes, peeled and cut into eights 2 medium carrots, cut in 1-inch pieces 2 small onions, peeled and cut in quarters 2 celery stalks, cut into 1-inch pieces Chopped parsley
Coat Dutch oven or large saucepan with vegetable cooking spray. Heat over medium heat, add beef cubes and brown on all sides. Add tomato juice, water, garlic, bay leaf, salt and pepper. Bring beef mixture to a boil; cover and reduce heat to low. Simmer 1 hour; add potatoes and carrots. Continue cooking 15 minutes; add onions and celery. Cook for 15 minutes more or until vegetables are tender. Garnish with chopped parsley if desired.3
