OLD-FASHIONED BRANDY SWEET POTATO PIE
Finally the Christmas season has arrived, and it's a time when people
start baking wonderful treats from the oven. Old Fashioned Brandy
Sweet Potato Pie is synonymous with the holiday season for many
families. Prepare this easy pie recipe for your holiday this year.

2 cups cooked mashed sweet
potatoes (about 3 med. potatoes)
2 tablespoons brandy
1 cup sugar
2 eggs, slightly beaten
1/2 cup evaporated milk
(heated until warm)
4 tablespoons butter or margarine
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla extract
1/2 teaspoon salt
Pastry for single crust pie, or
unbaked pie shell
Place unpeeled sweet potatoes in
enough water to cover and cook
until tender; drain. Cool sweet potatoes
and peel. Slice the sweet potatoes.
Mix together 2 cups sweet
potatoes and brandy. Next, add the
sugar and eggs. Beat the mixture
until smooth. Add the butter and
milk. Stir the sweet potato mixture
until well-combined. Add the nutmeg,
cinnamon, vanilla and salt.
Pour the filling into prepared pie
crust. Bake the pie in a 350 degree
oven for 30 minutes, or until crust is
nicely browned. Serve warm or
chilled with sweetened whipped
cream.
