QUICK BREAD ANYTIME

You can make bread for your family anytime. This Quick Zucchini Bread does not require a lot of time or preparation. So treat your family to a tasty loaf of bread anytime.

Quick Zucchini Bread

4 cups coarsely shredded zucchini
3 cups all-purpose flour
2 1/2 cups sugar
1 1/4 cups vegetable oil
4 eggs, beaten
1 tablespoon plus
1 teaspoon vanilla
2 teaspoons ground cinnamon
1 1/2 teaspoons salt
1 1/2 teaspoons baking soda
1 teaspoon ground cloves
1/2 teaspoon baking powder
1 cup chopped nuts

Heat oven to 325 degrees. Generously grease bottoms only of two 9x5x3-inch baking pans. Beat all ingredients on low speed, scraping bowl constantly for 1 minute. Beat on medium speed for 1 minute. Pour into pans. Bake until wooden pick inserted into center comes out clean, about 1 hour. Cool for 10 minutes; remove from pans. Cool completely before slicing.

Yields 2 loaves
