No holiday meal is complete without sweet potatoes. Sweet potatoes are nutritious and versatile. Orange Sweet Potatoes makes a perfect side dish for any holiday meal. Fresh orange juice adds a tangy twist to this recipe, and your family will love the flavor.
Orange Sweet Potatoes
1 1/2 pounds sweet potatoes, peeled and cut into 1 1/2-inch cubes 2/3 cup fresh orange juice 1/2 cup water 1/2 cup brown sugar 2 tablespoons butter or margarine 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg Dash salt
Place sweet potatoes in 2-quart saucepan. Add orange juice, water, sugar, butter, vanilla, cinnamon, nutmeg and salt. Bring to a boil; reduce heat to medium and continue to cook until sweet potatoes are done, about 20 minutes. If necessary, increase heat and cook until sauce reaches the desired consistency.
