Recipe of the week: romantic dessert

February is the month for romance. Here is an easy but elegant dessert to make for that someone special. Cherries Jubilee sound like it would be difficult to make but it is easy. Give it a try this month.

CHERRIES JUBILEE

2 15-ounce cans pitted cherries with juice
1/2  cup sugar
3    tablespoons unsalted butter, at room temperature
1/2  cup brandy
1    pint vanilla ice cream

Combine cherries and sugar in saucepan over medium heat. Cook, stirring
occasionally, until sugar is dissolved and liquid is reduced by half,
3 to 5 minutes. Add butter and stir until melted and completely
incorporated. Remove pan from heat, add brandy and return pan to medium
heat. Bring mixture to a boil. The brandy may ignite but will eventually
burn off. Divide ice cream among four bowls and top with cherry mixture.
Serve immediately. Garnish with mint leaves if desired.

Yields 4 servings
