By adding herbs, you can turn a regular, plain dish into one like Lemon-Dill Salmon Patties. This recipe will certainly please your family and friends.

LEMON-DILL SALMON PATTIES
1 15 1/2-ounce can salmon, drained
and flaked
1 egg, beaten
1/2 cup thinly sliced green
onions
2 teaspoons grated lemon rind
1 tablespoon fresh lemon juice
1 1/2 teaspoons fresh dill
1/3 cup corn muffin mix
Dash hot pepper sauce
Vegetable oil
Mix all ingredients except vegetable oil until well combined. Shape
salmon mixture into 6 patties. Heat 1 1/2 to 2 inches of oil in heavy
skillet until hot. Fry patties, turning once until golden brown, about
8 minutes; place on paper towel to drain. Serve with tartar sauce.
Yields 6 servings
