Salmon's great fresh off
the grill. But what about
when the grill is buried
under three feet of snow?
We asked Brad Gates,
the executive chef at
New York City's Pioneer
Restaurant & Bar, for this
cold-weather variation
on standard grilled fish.

Ingredients

2 (7-oz) salmon fillets,
 with skin
1 cup baby potatoes,
 sliced into 1/4-inch.
 pieces
1 cup broccoli
2 large onions, diced
3 cloves garlic, minced
1 tsp ground sage
1/2 cup vinegar (malt
 vinegar tastes best)
1/2 cup soy sauce
2 tbsp honey
1 tsp Tabasco sauce

To make: Saute the
salmon in a nonstick skillet
until its skin starts to
change color. Transfer the
salmon to a baking dish
and cook at 450 degrees
for 8-10 minutes or until
flakey. Spread the potatoes
on a baking sheet and
bake until crisp. Then
saute the broccoli, onions,
garlic, and sage over
medium heat until tender.
Mix remaining ingredients
together to form a sauce.
Fan the potatoes out on
a plate, top with broccoli,
then add a bit of the
sauce. Serves two.
