Dr. Alfred Pennington studied overweight workers at famed research firm DuPont in Wilmington, Del., and theorized that people could metabolize fat, but not carbohydrates. He believed that overeating carbs was the primary villain in excess fat production--the first shot fired in what is now the Atkins revolution.
