Grill off your gut: the perfect fuel for building the perfect body

JAMAICAN JERK-STYLE GRILLED
SHRIMP AND SCALLOPS

  2 tbsp Jamaican jerk seasoning
    (pick a brand that's low in
    carbs and sugar)
1/4 cup vegetable oil
  1 lb (12-16) fresh jumbo shrimp,
    peeled and deveined, tails on
  1 lb fresn sea scallops,
    medium to large
 12 bamboo skewers

To make: [1] Soak skewers in water (to keep
from burning). [2] Preheat grill to medium-high.
You can also use an indoor grill or grill
pan over high heat. [3] Mix
jerk seasoning with the oil in
a small bowl. [4] Lightly coat
each shrimp and scallop with
the thinned jerk seasoning.
[5] Thread shrimp and scallops
onto each skewer, leaving
a couple of inches free
at the base. [6] Place skewers on the grill,
with the longest part of the stick hanging off
the edge, away from the fire. Stay close and
turn the sticks by hand to
keep them from burning. The
shrimp and scallops should
cook in just 4-5 minutes.
[7] Serve with melon, grilled
corn, and a smoothie made
with strawberries, milk, ice,
and artificial sweetener.
