Don't can the canned corn

WHEN FRESH corn isn't in season, try canned. According to new research by scientists at Cornell University, canned corn actually has more healthful properties than fresh corn on the cob. That's because the heat processing raises the levels of antioxidant chemicals, especially one called ferulic acid.

We suggest rinsing canned corn to lower the sodium content (or you can purchase the low-sodium variety). And don't worry about creamed corn if you like the taste--most brands aren't much higher in fat or sugar.
