My favorite recipe …

Coconut Prawns

  2 cloves garlic
  4 jalapenos, diced
1/2 cup lime juice
 12 tiger prawns, halved
  2 tsp sugar
  2 tbsp fish sauce (or
    light soy sauce)
  2 cups grated coconut
  8 shallots, sliced
  1 stalk lemongrass,
    finely sliced
1/2 cup mint leaves
  1 bunch cilantro, chopped
  2 jalapenos, sliced

TO MAKE:

[1] Mash the garlic and
jalapenos late a paste,
Add the lime juice and
mix well. [2] Saute the
prawns in a nonstick
skillet for 10 seconds.
[3] Dump the prawns
into the marinade. [4]
Add the remaining ingredients
to the bowl and
mix gently. SERVES 4.
