AVOCADOS ARE ONE of the healthiest fresh foods around. They do possess a high percentage of fat, but it's the beneficial monounsaturated kind. The naturally buttery texture gives life to any lean protein.
PAIR AVOCADO with a lean white fish such as orange roughy, or in a salsa or relish with grilled fruit such as cantaloupe, pear or mango. To avoid discoloration, add a touch of lemon or lime juice during preparation.
LOOK FOR: Uniformity and density; the fruit should yield to finger pressure and spring back when released.
