Chicken Fajita
Strips With Rice
1 cup dry brown rice,
cooked
1 tsp paprika
1/8 tsp cumin
1/2 cup salsa
1 1 lb roasted chicken
breast, cut into fajita-size
strips
1 small onion, sliced
1 bell pepper, sliced
Salt and pepper to taste
1 tbsp lime juice
TO MAKE: [1] In a large bowl, combine the cooked rice, paprika, cumin, and salsa. [2] Stir until mixed thoroughly and reheat in the microwave or on the stovetop. [3] In a large skillet or wok coated with nonstick cooking spray, stir-fry the roasted chicken strips, onion, and bell pepper over high heat until the onions start to brown, or about five minutes. Add salt and pepper while stir-frying. [4] Divide rice onto two plates, top with the chicken and vegetables, and drizzle the lime juice over the top. Serves 2.
