The chefs who participated in Savor, a recent culinary fundraiser for the Gay Men's Health Crisis held at Skylight Studios in New York, prepared menu items that were a far cry from typical steak and salmon. Dishes included rabbit slowly simmered in white Burgundy, escargots with marrow and sweetbread cervelas, and braised short ribs with butternut squash risotto.
