The 84th Annual Restaurant Hotel-Motel Show schedule of events

Former New York City Mayor Rudolph Giuliani will deliver the keynote speech at the 84th annual National Restaurant Association Restaurant, Hotel-Motel Show, May 17-20 at McCormick Place in Chicago. Giuliani is scheduled to speak Sunday, May 18.

The following schedule lists the showcases and events that will be held throughout the NRA show;

FRIDAY, MAY 16

The Franchise Pavilion

North Hall, Level 3

9:30 a.m.-5 p.m.

If you are interested in exploring franchise opportunities, come to the Franchise Pavilion to meet with the industry professionals for face-to-face networking and product research.

Minority Business Exchange: "Adding Value Through Difference"

North Hall, Level 1

9 a.m.-5 p.m.

The National Restaurant Association, in conjunction with the MultiCultural Foodservice Hospitality Alliance, developed this pavilion to highlight the importance of "adding value through differences." Expanding business relationships with minority-owned suppliers has its benefits and could be good for business. The American Culinary Classic

South Hall, Level 3

9:30 a.m.-5 p.m.

This culinary competition will take place in custom-designed, glass-enclosed kitchens located on the exhibit floor throughout the show. Viewers will see everything from preparation to presentation. Such culinary-arts competitions evaluate the creativity and technical and presentation skills of chefs and pastry chefs. The competing chefs strive to make the public aware of the culinary trends available today and are judged on flavor blends, nutritional content, timing and technique. Show attendees will have the opportunity not only to watch the chefs in action but also to taste the meals they prepare. Tickets are $35. Technology Pavilion

North Hall, Level 3

9:30 a.m.-5 p.m.

In any successful hospitality operation, technology is an essential ingredient for streamlining operations and increasing sales. Participate in high-tech demonstrations, visit a variety of exhibits and experience the Cyber Cafe.

The Hotel Collection

South Hall, Level 3

9:30 a.m.-5 p.m.

This exhibit features companies who manufacture apparel, flooring, fire and security systems, wall coverings, furnishings, guest services, uniforms, amenities and much more.

American Food Fair North Hall

Level 3

9:30 a.m.-5 p.m.

American food and beverage manufacturers display their products to foodservice industry members. The National Association of State Departments of Agriculture is sponsoring the fair.

Ice Carving

North Hall Level 1

9 a.m.-5 p.m.

The world's finest ice-carving craftsmen demonstrate their work every day during the show. Watch the masters transform 4 tons of ice into magnificent sculptures.

SATURDAY, MAY 17

Hennessy Awards Breakfast

8-10 a.m.

The 47th annual Hennessy Awards will honor the special achievements of U.S. Air Force foodservice facilities worldwide. Gen. Ralph E. "Ed" Eberhart, commander, North American Aerospace Defense Command, and commander, U.S. Northern Command, Peterson Air Force Base in Colorado, will deliver the keynote speeches. A panel, including Holly Fasano and Arthur Fasciani of Harvard Business School Publishing, will use interactive discussion to help individuals understand the dynamics of the manager versus the leader in their daily task of accomplishing difficult goals. They will discuss the various styles of leadership and help attendees identify what styles are most comfortable for them. Learn why ongoing lifetime learning is important in any career and how to find the time for it in a busy and hectic daily schedule. A reading list of suggested materials for developing leaders and enhancing leadership skills also will be provided.

Energy Sourcing and Management Options for the Hospitality Industry
