Corporate chefs association gathers for first conference

MIAMI BEACH, FLA. -- The people responsible for the food at Red Lobster, Burger King, KFC and other chains met at the Loews Miami Beach hotel here recently for the inaugural conference of the International Corporate Chefs Association. The small but influential group sampled cheese paired with wine, discussed food safety and menu trends and attended lectures on genetically modified food and other political hot-button topics at the three-day event.

Local chefs Allen Susser of Chef Allen's and Michelle Bernstein of Azul took the chefs on tours to local markets and restaurants. The tours culminated in cooking demonstrations in the kitchen of the Loews' Gaucho Room, which just had closed its doors in preparation for the arrival of Emeril Lagasse, who will open a restaurant of his own there later this year.
