Johnson & Wales student wins avocado competition

PROVIDENCE, R.I. -- Astrid Auchmuty, a senior at the Johnson & Wales University branch here, won $2,000 in this year's Fiesta Time Avocados from Mexico Student Recipe Contest with her Hass avocado salad with Maryland lump crabmeat, trio of peppers and crisp frisee.

The salad was one of the many stacked appetizers that judges said were entered in the competition.

Second place went to Robert Andersen Jr. from Salt Lake Community College in Salt Lake City for his stacked avocado salad with red-wine vinaigrette.

Molly Abbott from First Coast Technical Institute in St. Augustine, Fla., took third place for her avocado and goat cheese mousse in Parmesan crisp mini-bowls.
