NEWPORT BEACH, CALIF. -- Bubba Gump Shrimp Co., operator of 14 full-service restaurants, plans to launch the fast-casual Capi's Italian Kitchen, at the Navy Pier in Chicago, by next March, president and chief executive Scott Barnett said.

Capi's would occupy 4,200 square feet and seat 100 inside and 150 on a patio.

Dave Lucarelli, chef at the Maui, Hawaii, Bubba Gump branch, helped design the menu of panini, pastas, salads and pizzas, geared to generate per-person check averages of $7 to $9.
