Any advice for someone considering a culinary career?

It's a lot of long hours and a lot of hard work, but don't lose your desire. If you really have a desire to be in this business, always keep a hold on that dream. You just can't lose your focus.

CHEF'S TIPS

* Use simple marinades of high quality olive oil and fresh herbs for meat and poultry.

* Help bring out the natural sweetness of meats by adding citrus, like lime juice, to sauces and marinades.
