Princeton launches Garden State Dinner Series

PRINCETON, N. J. -- Students at Princeton University were treated to an array of fine foods last month from Esty Street, a Park Ridge, N.J., restaurant, as part of the university's Garden State Dinner Series.

Esty Street owner Scott Tremble and his executive chef, Jack Mistretta, worked with Princeton chefs and cooks to prepare items typically served at Esty Street. The dinner was prepared for resident students at four dining halls over a four-day period in November.

Appetizers included duck quesadilla and butternut-squash ravioli, and the entrees were roasted cod, grilled loin of lamb, sauteed breast of chicken and risotto cake. Two soups, tomato ginger and Jersey corn soup, were served, and desserts included milk-chocolate banana bread strudel and pear and cranberry crisp.
