THE STONEWALL KITCHEN COOKBOOK, Jonathan King and Jim Stout, 164 pages, New York: HarperCollins, $28.

In 1991 in York, Maine, the authors founded Stonewall Kitchen, a specialty items store. The 75 recipes offered in their cookbook show how to use quality condiments in everyday cooking.

If you thought Maine had little good food besides lobster, you will be surprised. The recipes do not define the nature of Maine's cuisine, but they do show its range. They include seafood pot pie, blackberry sage roast chicken and blueberry sour cream coffee cake. The book offers many color photographs showing Maine's spectacular, scenic beauty.
