In addition to the daily operation of the Fountain, Lacroix is also responsible for banquets, room service and the Swann Lounge & Cafe, a casual restaurant in the hotel.

"Being in a hotel can be a little bit distracting," Lacroix admits. "You can easily get away from cooking. But the Four Seasons is open-minded. They want you to take care of the restaurant. It is important to them that the restaurant be first in the city."
