BAB Holdings to buy Brewster's Coffee Co

CHICAGO -- BAB Holdings, operator of Big Apple Bagels, has signed a letter of intent to buy the assets of Brewster's Coffee Co.

If the agreement becomes binding, as expected, the seven-unit, Chicago-based Brewster's will become a franchisee of BAB, said Michael Evans, BAB's chief executive. The stores will be called Big Apple Bagels and will sell branded Brewster's Coffee

"We believe in this coffee and bagel combination. There is a possibility of stand-alone Brewster's Coffee units in some markets," Evans said. BAB, which currently operates 69 stores in 16 states and Canada plans to incorporate Brewster's double-drive-thru concept into the bagel shops.

Peter Grumhaus, Brewster's president, plans to stay on in an as-yet-undetermined capacity.
