Consumers' interest in soy-based foods

Prepared Foods, Feb, 2002

Consumers' interest in soy-based foods has increased, but their palates still crave meat and cheese. A line of flavors for use in soy-based applications, such as soy-based meat and cheese alternatives, has been introduced. The flavors, which include turkey, chicken, bean, pork, cheddar, mozzarella and Swiss, help soy-based alternatives taste similar to the originals by creating an appropriate flavor, and masking the beany note present in soy. The 100% natural line is offered in a heat-stable, water-soluble base, liquid or powder form.
