Shortening without trans fat

Prepared Foods, Feb, 2003

Increased consumer awareness of the negative effects of trans fat has resulted in food, bakery and nutrition bar manufacturers searching for healthful alternatives to shortening with trans fat. Benefat[R] is a true fat in a shortening form, yet contains no trans fat and it can be substituted for the current fat in a product.

The ingredient functions like a typical shortening in a formulation and can be used in margarines and spreads, confectionery, dairy, baked good and snack products. Additionally, it is GRAS and stable to oxidation. Danisco, Terese O'Neill, 800-255-6837, ext. 1316, ggtko@danisco.com
