These ingredients improve the rise of baked goods in the oven or microwave, resulting in increased volume. Primera Foods's PrimeCAP[R] Bakery Blend line of encapsulated leavening systems offers a perfectly balanced blend of sodium bicarbonate and phosphate, encapsulated so the components release only when desired.

PrimeCAP is already balanced, so the blends eliminate spotting that can occur from un-reacted acids or bicarbonates.
