Savory, Broths, Sauces and Flavors Made From Scratch

In the late 1960,s Ariake's founder; Mr. Kineo Okada, set out to produce soup and sauce flavoring on a commercial scale, applying traditional culinary methods. He succeeded and Ariake is now the largest supplier of these ingredients in Japan and now produces and offers them in America.

In addition to plants in China and Japan, Ariake's plant in Harrisonburg, Virginia produces meat and poultry savory ingredients based on our proprietary techniques. Here we use choice local domestic materials and supplement our resources with American culinary and scientific capabilities. The plant is USDA approved, AIB inspected, Organic certified, and operates under the most stringent quality standards.

Ariake's Commercial-Scale "Stock Pot"

Our industrial "stock pot" produces primarily water extracts from meat and poultry, then filters, separates and concentrates to yield liquid or dry flavors, with or without added salt. Ariake not only processes beef, chicken, pork and turkey but also vegetable, cheese and seafood.

The core products - shelf stable stocks and broths - are also further compounded into soup bases, sauces, bouillons, flavorings and soups from an existing culinary repertoire or customized to meet customer specifications.

Rich, Natural Roast Taste. Clean label. Diverse Applications.

Meat and poultry extracts are true natural flavors that add authenticity and consistency to:

* Sauces and Soup (frozen, canned, dry)

* Prepared foods and meal solutions

* Value added meal products and meat snacks

* Flavorings and seasoning blends

* Pasta fillings and Rice dishes

The terms "stock" and "broth," often preferred on ingredient statements, are "clean" labels when compared to other common savory protein sources.

Careme, the great 19th century chef, taught that "meat should be garnished with meat". Hence, stocks have long been the basis, the fond or foundation, of the flavor of the sauce in the school of the classic cuisine. Both chefs and technologists will find them indispensable when trying to achieve excellence in taste, more easily matching the gold standard of the culinary arts.
