A new overview brochure explains how Dow's line of chelating agents called Versene can be used to control metal ions in products and processes. Left uncontrolled, these ions can cause scaling, chemical degradation, discoloration, precipitation, emulsion instability, rancidity and other problems.

Trace amounts of soluble iron, copper, manganese, calcium and other metals occur naturally in many raw materials, are commonly found in processing water and can be introduced by processing equipment. Consequently, the potential for scaling and undesirable metal-catalyzed reactions is widespread. Chelating agents inhibit unwanted metal catalyzed reactions by forming complexes with these metal ions. The resulting structures can deactivate the metal ions and prevent them from reacting with other ingredients in a process stream or product.
