Incredible egg salads

When the mood for something savory hits you, have a crack at these interpretations of an old favorite.
I confess that egg salad didn't top my list of favorite foods until I tried reader Hilda Marshall's updated version of this classic spread. Her touches of smoky bacon, fresh chives, and onion won my vote at our taste-testing table.
As with potato salad, the basic combination of eggs and mayonnaise gives you the freedom to pare down or embellish however you see fit. (The Smoked Salmon-and-Egg Salad, for example, offers an unexpectedly fancy rendition.) And here's an excellent tip: If your favorite egg salad recipe seems a little wet, stir in 2 tablespoons of instant potato flakes. That worked great when we experimented with our sweet pickle version inspired by Hilda's recipe.
