Sirloin, cut into pieces by the butcher and packaged under the label beef tips, is a great choice for weeknight suppers. It's a lean cut that shrinks little during cooking, so you get full value for your money. Here, we give you two clever ways to use beef tips. You can prep each recipe in about 20 minutes, then walk away for an hour or so while slow simmering tenderizes the beef.

FESTIVE CAJUN PEPPER STEAK

MAKES 4 TO 6 SERVINGS

SPRINKLE beef tips with Cajun seasoning.

COOK beef in hot oil in large skillet over medium-high heat 10 minutes or until browned. Add bell pepper, onion, and garlic; saute 3 minutes. STIR in broth and next 6 ingredients. Bring to a boil; reduce heat, cover, and simmer 1 hour or until meat is tender.

COOK frozen mashed potatoes according to package directions.

STIR together cornstarch and water until smooth; stir into meat mixture. Bring to a boil; cook, stirring constantly, 2 minutes or until thickened. Serve over mashed potatoes.

BEEF STROGANOFF

MAKES 4 SERVINGS

PREP: 20 MIN.; COOK: I HR., 10 MIN.

SPRINKLE beef tips evenly with salt and pepper.

BROWN beef in hot oil in a large skillet over medium-high heat; add onions and mushrooms, and saute, 3 to 5 minutes or until tender.

STIR broth, tomato paste, and mustard into beef mixture. Cover, reduce heat to low, and cook 1 hour or until beef is tender.

COOK noodles according to package directions; drain.

COMBINE sherry and flour; stir into beef mixture, and cook, stirring constantly, until thickened. Stir in sour cream. Serve over hot egg noodles; sprinkle with parsley, if desired.
