We sampled several recipes from the book including Grilled Flank Steak and yummy German Chocolate Sheet Cake topped with creamy frosting. BARBECUED PORK ROAST

MAKES 8 SERVINGS

PREP: 25 MIN.; BAKE: 1 HR., 20 MIN.;

STAND: 15 MIN.

1 (3-pound) boneless, rolled pork loin roast

3 large garlic cloves, thinly sliced

1 teaspoon pepper

1 teaspoon dried thyme leaves

1 onion, sliced

Vegetable cooking spray

1/2 cup fat-free chicken broth

1/2 cup cider vinegar

1 (6-ounce) can tomato paste

1/4 cup lemon juice

2 tablespoons light brown sugar

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1/2 teaspoon paprika

Garnishes: lemon wedges, Italian parsley

TRIM any excess fat from roast. Cut deep slits in roast, using a paring knife; insert garlic slices. Stir together pepper and thyme; rub over all sides of roast, and set aside.

SAUTE onion in a nonstick skillet coated with cooking spray over medium heat until tender. Stir in chicken broth and next 7 ingredients; bring to a boil, Pair saucy Barbecued Pork Roast with mashed potatoes or fluffy rice for a hearty supper.

PLACE roast in a lightly greased large Dutch oven; pour sauce over roast.

BAKE, covered, at 350[degrees] for 1 hour and 20 minutes or until a meat thermometer registers 170[degrees]. Let stand 15 minutes. Slice and serve with sauce; garnish, if desired.

Dirty Rice

MAKES 6 SERVINGS

1 pound lean ground beef

2 garlic cloves, minced

2 celery ribs, chopped (about 1/2 cup)

1 medium onion, chopped

1 tablespoon chopped fresh parsley

1 green bell pepper, chopped

1 teaspoon salt

1/4 teaspoon ground red pepper

1/4 teaspoon ground black pepper

1 tablespoon Worcestershire sauce

1 cup uncooked rice

1 (14.5-ounce) can beef broth

3/4 cup water

COOK ground beef and next 5 ingredients in a large skillet over medium-high heat, stirring until beef crumbles and is no longer pink.

STIR in salt and next 3 ingredients; stirring well. Add rice, broth, and 3/4 cup water, stirring well. Bring to a boil; cover, reduce heat, and simmer 25 to 30 minutes or until rice is tender.

SHRIMP REMOULADE

MAKES 8 ( 1/4-CUP) SERVINGS

PREP: 15 MIN.

1/4 cup light mayonnaise

1 bunch green onions, sliced

1/3 cup chopped fresh parsley

2 tablespoons prepared horseradish

2 tablespoons Creole mustard

2 tablespoons Dijon mustard

1 tablespoon lemon juice

2 pounds peeled cooked shrimp

STIR together first 7 ingredients; add shrimp, tossing to coat. Cover and chill until ready to serve.

GERMAN CHOCOLATE SHEET CAKE

MAKES 48 SERVINGS

PREP: 25 MIN., BAKE: 17 MIN.

1 (18.25-ounce) package German chocolate cake mix

1 large egg

2 egg whites

1 3/4 cups water

Vegetable cooking spray

1 (14-ounce) can fat-free sweetened condensed milk

1/3 cup sweetened flaked coconut

1/3 cup chopped pecans

1/4 cup margarine, softened

1 (16-ounce) box powdered sugar

1/3 cup unsweetened cocoa

1 teaspoon vanilla extract

3 to 4 tablespoons fat-free milk

BEAT German chocolate cake mix and next 3 ingredients at medium speed with an electric mixer 3 to 4 minutes or until creamy. Pour batter into a 15- x 10-inch jellyroll pan coated with cooking spray.

BAKE at 350[degrees] for 15 minutes.

COMBINE sweetened condensed milk, coconut, and pecans; spread over warm cake.

BROIL, on lowest rack in oven, about 2 minutes or until golden. Remove from oven and cool.

BEAT margarine and next 3 ingredients at medium speed with an electric mixer until blended; gradually add fat-free milk, beating until smooth. Spread over cake.

Calories 128 (23% from fat); Fat 3.3g (sat 1g, mono 1.3g, poly 0.6g); Protein 2g; Carb 23g; Fiber 0.4g; Chol 12mg; Iron 0.5mg; Sodium 103mg; Calc 36mg.

NOTE: For testing purposes only, we used Duncan Hines Moist Deluxe German Chocolate Cake Mix.

GRILLED FLANK STEAK

MAKES 6 SERVINGS

PREP: 10 MIN.,

CHILL: 8 HRS., GRILL: 14 MIN., STAND: 5 MIN.

2 tablespoons dry red wine

1 tablespoon red wine vinegar

1 tablespoon prepared horseradish

1 tablespoon ketchup

1 teaspoon dried thyme leaves

1 teaspoon minced garlic

1/2 teaspoon pepper

2 pounds flank steak

COMBINE first 7 ingredients in a shallow dish or heavy-duty zip-top plastic bag; add steak. Cover or seal, and chill 8 hours, turning occasionally.
