what's for supper? Pork Tenderloin

This no-waste cut is a smart buy for weeknight meals.

Grilled pork tenderloin makes a great supper at the end of a busy day; just be sure to not overcook the meat. The concerns of the past aren't the concerns of today, according to the National Pork Board. A light blush of pink in the center of the cooked tenderloin is a sign it will be juicy and flavorful. GRILLED PORK TENDERLOIN WITH GINGERED JEZEBEL SAUCE

MAKES 6 SERVINGS

PREP: 10 MIN., CHILL: 20 MIN.,

GRILL: 25 MIN., STAND: 10 MIN.

½ cup lite soy sauce

2 tablespoons dark brown sugar

2 green onions, chopped

2 tablespoons sherry (optional)

3 pounds pork tenderloins

Gingered Jezebel Sauce

Garnish: fresh rosemary

COMBINE first 3 ingredients and, if desired, sherry in a shallow dish or large zip-top plastic freezer bag; add pork. Cover or seal, and chill 20 minutes.

REMOVE pork from marinade, discarding marinade. Grill pork, covered with grill lid, over medium-high heat (350° to 400°) 25 minutes or until meat thermometer inserted into thickest portion registers 155°, turning once and basting with ½ cup Gingered Jezebel Sauce the last 5 to 10 minutes. Let stand 10 minutes or until thermometer registers 160°. Slice and serve with remaining ¾ cup Gingered Jezebel Sauce.

Gingered Jezebel Sauce:

MAKES 1 ¼ CUPS

PREP: 5 MIN.

Ginger replaces dry mustard in this version of jezebel sauce.

2/3 cup pineapple preserves

1/3 cup apple jelly

2 tablespoons prepared horseradish

1 tablespoon grated fresh ginger

MICROWAVE pineapple preserves and apple jelly in a glass bowl at HIGH 2 minutes or until melted. Stir in remaining ingredients.

FRESH TOMATO BISCUITS

MAKES 10 BISCUITS

PREP: 10 MIN., BAKE: 12 MIN.

¼ cup mayonnaise

¼ teaspoon salt

¼ teaspoon coarsely ground pepper

¼ cup shredded fresh basil

1 (16.3-ounce) can refrigerated flaky biscuits

2 medium-size tomatoes, thinly sliced

COMBINE first 4 ingredients. Set aside.

PRESS each biscuit into a 4-inch circle. Place biscuit circles on a lightly greased baking sheet.

BAKE at 400° for 6 minutes. Spread each biscuit evenly with about 2 tea- spoons mayonnaise mixture. Top even Iy with tomato slices. Bake at 400° for 6 more minutes or until mayonnaise, mixture is bubbly. Serve immediately.

NOTE: For testing purposes only, we used Pillsbury Golden Layers Buttermilk Biscuits.
