Quick prep times and seasonal flavors make these recipes surefire hits.

When it comes to rounding out weeknight suppers, you need recipes you can pull together easily. all of these have a prep time of 10 minutes or less without sacrificing a lick of flavor-and they require minimal hands-on cooking. The most you'll have to do is some sautéing for the Zucchini With Citrus-Herb Dressing. Once you quickly cook the beans for the Roasted Green Beans With Mushrooms, simply assemble it, and pop it in the oven for about 25 minutes. The Apple-Bacon Coleslaw, which requires no cooking at all, uses precooked bacon and a bag of coleslaw mix to make it extra-simple to prepare.

ZUCCHINI WITH CITRUS-HERB DRESSING

For an extra touch of flavor, top this dish with long Parmesan cheese curls created using a vegetable peeler.

1/12 pounds medium zucchini

½ teaspoon salt

1 garlic clove, minced

2 tablespoons olive oil
