Tasty Turkey Burgers

This quick supper beats the drive-through any day of the week. We made Tasty Turkey Burgers with ground turkey that included some dark meat. You can also use 100% turkey breast, which is lower in fat; just remember, it is the fat that helps keep the burgers moist. Add potato salad, and you're ready to serve. -CHARLA DRAPER

Tasty Turkey Burgers

MAKES 4 SERVINGS

PREP: 15 MIN., GRILL: 14 MIN.

1 lb. ground turkey

½ cup Italian-seasoned breadcrumbs

1 large egg, beaten

¼ cup finely chopped green bell pepper

1 Tbsp. minced dried onion

½ tsp. salt

½ tsp. freshly ground pepper

2 Tbsp. Fresh Herb Marinade

4 hamburger buns

Herb-Grilled Onion Rings

Toppings: spicy mustard, shaved Parmesan cheese

1. Combine first 7 ingredients. Shape mixture into 4 equal-size patties.

2. Grill, covered with grill lid, over medium-high heat (350° to 400°) 5 to 6 minutes on each side or until no longer pink in center, basting each side occasionally with Fresh Herb Marinade.

3. Grill buns, cut sides down, 2 minutes or until toasted. Serve burgers on buns with Herb-Grilled Onion Rings and desired toppings.

Classic Burgers: Substitute 1 Ib. ground chuck for ground turkey. Prepare recipe as directed.

Herb-Grilled Onion Rings

MAKES 4 SERVINGS

PREP: 5MIN., GRILL: 12 MIN.

2 large Vidalia onions

4 Tbsp. Fresh Herb Marinade, divided

1. Cut each onion into ½-inch-thick slices. Brush slices evenly with 2 ½ Tbsp. Fresh Herb Marinade.

2. Grill, covered with grill lid, over medium-high heat (350° to 400°) 4 to 6 minutes on each side or until tender, basting once with remaining marinade.

Fresh Herb Marinade:

MAKES ABOUT 1/3 CUP

PREP: 10 MIN.

¼ cup vegetable oil

2 Tbsp. balsamic vinegar

1 ½ Tbsp. chopped fresh cilantro

1 Tbsp. chopped fresh rosemary

½ tsp. kosher salt

Freshly ground pepper to taste

1. Stir together first 5 ingredients in a small bowl. Season with pepper to taste.

Chocolate Cookie Bites

MAKES 2 ½ DOZEN

PREP: 10 MIN., BAKE: 21 MIN., COOL: 13 MIN.

Serve these bite-size treats with homemade Vanilla Ice Cream on page 144 or your favorite vanilla ice cream.

¾ cup chopped pecans

1 ¼ cups powdered sugar, divided

1 cup butter, softened

2 Tbsp. milk

1 tsp. vanilla extract

2 cups all-purpose flour

¼ cup unsweetened cocoa

¼ tsp. salt

1. Place pecans in a single layer in a shallow pan.

2. Bake at 350° for 6 to 8 minutes or until lightly toasted, stirring once halfway through baking time.

3. Beat 1 cup powdered sugar and butter at medium speed with an electric mixer until creamy. Add milk and vanilla, beating until blended.

4. Combine flour, cocoa, and salt; gradually add to butter mixture, beating until blended. Stir in pecans.

5. Shape dough into 1 -inch balls, and place 1 ½ inches apart on lightly greased baking sheets.

6. Bake at 400° for 11 to 13 minutes or until tops of cookies just begin to crack. Cool on baking sheets 3 minutes. Remove to wire racks; dust with remaining Vi cup powdered sugar. Cool 10 minutes.
