Trigony Country House Hotel, near Thornhill, Dumfriesshire

Where and why Deep in the lush Dumfriesshire countryside lies this laid back family-owned country house hotel. When you arrive, have a drink in the snug bar with the log fire roaring and feel all your urban angst drip away. Dogs are welcome too. Each room is different: ours was huge with stunning views.

On the menu Chef Adam prides himself on his cooking - and you can see why. This is proper high-end food but without any OTT showing- off. It's all seasonal and much is sourced in the immediate vicinity. There's local beef, venison and fish on the menu and veggies are well catered for. We had a mouthwatering starter of roast butternut squash, tarragon and Isle of Mull cheddar souffl. Leave plenty of room for dessert: we had organic rhubarb and ginger crumble.

While you're there The pretty village of Thornhill is a mile or so away and historic Drumlanrig Castle is nearby. Drumlanrig has Britain's only museum devoted to cycling.
