When ready to bake, heat oven to 350. Bake covered for 30 minutes; uncover and bake 25-30 minutes longer or until top is puffed and center is set. Serve with blueberry syrup.

RACHEL'S BACON CHEESE FRITTATA

16 eggs

2 1/2 cups milk

Salt and pepper to taste

4 1/2 tablespoons butter, melted

1 green onion, chopped

12 pieces of bacon, cooked and crumbled

1 3/4 cups cheddar, grated

Beat eggs, milk, salt, pepper and melted butter. Pour into greased 9x13-inch baking dish. Sprinkle with bacon, cheese and onion. Bake at 350 for 40-45 minutes.

AMBROSIA PARFAIT

1 1/2 cups vanilla fat-free yogurt

1 (8-oz.) can crushed pineapple in juice, drained

1 medium banana, sliced

1 (11-oz.) can mandarin orange segments in light syrup, drained

1/4 cup flaked coconut, toasted

4 strawberries sliced

Mix yogurt and pineapple. Spoon 2 tablespoons yogurt mixture into each of four parfait glasses; top with banana. Spoon 2 tablespoons yogurt mixture on top of banana; top with orange segments. Spoon remaining yogurt mixture on top orange segments. Sprinkle with coconut. Garnish with strawberries.

CLASSIC COFFEE CAKE

Cake:

1 cup butter, softened

1 1/2 cups sugar

2 eggs

1 1/2 teaspoons vanilla

2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1 cup sour cream

Topping:

1/2 cup brown sugar

1/4 cup sugar

1 teaspoon cinnamon

1/2 cup walnuts, chopped

Preheat oven to 350. Butter a 9x13-inch baking pan. (Use a slightly smaller pan for thicker pieces of coffee cake.)

Cake: Cream butter in a mixing bowl. Gradually add sugar, eggs and vanilla, beating well after each addition. In a separate bowl, mix flour, baking powder and baking soda. Add flour mixture alternately with sour cream to creamed mixture.

Topping: Mix sugars and cinnamon.

Pour half of batter in pan. Sprinkle with walnuts and half of topping Add remaining batter and sprinkle remaining topping. Bake 45 minutes.
